Where It Starts

Sonata Sol is the first coffee we rosted from in 2023 and has become an annual tradition to bring in the new crop each year. It is grown in cool mountainous areas with a combination of distinct volcanic soil, generous rainfall and shade from the forest canopy. The result is magic. A bright and vibrant flavor that only Chiapas beans embody.

Why this coffee was selected

This coffee is bursting with flavor and is grown in cool mountain climates creating a nice dense bean and fruity flavor. This coffee is excellent when brewed but we love it in a cold brew to get a really clean taste of the fruit and chocolate notes. Roasted light, it allows the incredible flavor of these beans to shine.

Grown in the high altitudes of the Sierra Madres in the south of Mexico, Sonata Sol reflects the quality and brightness of coffees from the Chiapas region and is why we keep coming back for more.

What Makes it Worth it

Sonata Sol is a great coffee. What we love is that each year the crop reflects what is happening in its environment and produces very distinct outcomes each year. This is what it is all about. In a world where we try to make everything we eat mechanized and consistent, single origin coffee is a reflection of its environment. This year's crop is dynamic and ranges from subtle nuttiness and sweetness to bright apple and citrus notes. We roast it light so you can taste it as nature intended.

What makes it different

Grown in the high altitudes of the Sierra Madres in the south of Mexico. This area boasts some of the best coffees grown in Mexico and is close in proximity to the famous Huehuetenago region of Guatemala. The natural flavors of the soil shine through in Sonata Sol highlight complex notes of dark chocolate, apple and nuttiness.

The people behind it

Sonata Sol is sourced from Chiapas in southern Mexico. Many small farms work hard to bring us this amazing coffee from within the Sierra Madres. It is washed and then sun-dried after fermentation to hit target moisture levels before making its way to the cup.

Roaster's Notes

Sonata Sol is the lightest roast we currently offer. After rigorous testing we felt that this brought out the best and brightest flavor profile. It is fantastic however you brew, but it has a lighter body and mouthfeel than a typical espresso. My favorite technique for Sonata Sol is steeping overnight at room temp in a french press. This really brings out the bright notes while still very smooth and balanced.
