What Is Roasted to Order Coffee and Why It Matters at Black Circle Coffee Roasters?

Roasted to order coffee means the beans are roasted after you place your order, not months before it ships. That single difference is why it matters to us at Black Circle Coffee Roasters, and it's worth explaining properly instead of just putting it on a bag.

Coffee is a perishable commodity, just like bananas, tomatoes, or apples. When we talk about freshness, that refers to both green (raw) coffee and roasted coffee. Green coffee has a finite window where it's at peak quality before it slowly loses character and flavor over time. Roasted coffee loses character, brightness, and aroma even faster, the longer it sits on a shelf. Coffees are not meant to have birthdays.

That's why we put the roast date on every bag instead of the typical "best by" date, and why we only roast in small batches once an order comes in. Your coffee isn't sitting in a warehouse or on a store shelf for weeks. It isn't roasted in massive lots to save time either. You order, we roast, we ship. No exceptions.

 

Why Roast Date Beats “Best By” Date

A "best by" date tells you almost nothing about a bag of coffee. It's usually set a year or more out, which means a bag could be sitting on a shelf for months and still carry the same date as one that was roasted last week. A roast date tells you the truth: the day the beans went into the roaster.

Most coffee sold in grocery stores was roasted weeks, sometimes months, before it reached the shelf. By the time it's brewed, a lot of the aromatic compounds that make fresh coffee taste bright and distinct have already broken down. Roasted to order skips that dead time entirely.

 

Why We Rotate Coffees Seasonally

At Black Circle, we also rotate our coffees as they become seasonally available, and that's another piece of the freshness picture. Technically, you can roast green coffee that's more than a year old if it's stored properly, but the cup will be far from what it was at peak freshness.

We recently launched an amazing Geisha from high up in the Andes in Peru. This microlot was harvested and dried in late March and made its way to our roastery fresh and vibrant. This lot is exactly why we started roasting to begin with, and why this seasonal cycle makes so much sense to us. Geishas are some of the most sought-after beans in the specialty coffee world, and this is a great example of why. Finding distinct, memorable single-origin coffees that are bursting with flavor is the foundation of what Black Circle is all about, and we want to share that experience with you.

 

Why We Don't Sell Ground Coffee

Another question we get often: why don't you offer ground coffee? The answer is simple. Once coffee is ground, more of the bean's surface area is exposed to oxygen, and you lose the aromatics that were locked inside the bean after roasting.

Take our Cloud Nectar, a fantastic coffee from Costa Rica. Freshly ground, you can smell amazing aromas of cinnamon and fruit notes. A week after grinding, it's noticeably more muted and dull. That drop-off is exactly what roasted to order is built to avoid.

If you're serious about freshness, invest in a good grinder with variable fineness settings, tune it to your brewing method, and grind right before you brew. Oxo makes a high-quality grinder, in the $100 range, that holds up well for home use. The grinder matters just as much as the coffee itself.

 

How Soon After Roasting Should You Brew Coffee?

Most fresh roasted coffee tastes best starting around 4 to 7 days after the roast date, once the beans have had time to release excess CO2, and holds its peak flavor for a few weeks after that. Because we roast after you order, your bag arrives close to the front of that window instead of somewhere near the end of it.
